Matured Fiocchetto

It is taken from the anterior muscle part of a pig haunch. It is produced in the same way as culatello, but it is smaller in size and the meat is leaner, so that maturing takes a shorter time. Thanks to careful light salting we get a high quality product as far as taste and flavour are concerned. Because of its size, it is also suitable to be sold by the piece for family consumption.
